Given that my husband is originally from New Orleans, I've learned to make several "New Orleans" style dishes. Almost two years ago, my mother-in-law, who currently lives in New Orleans, came to live with us for 4 1/2 months due to Hurricane Katrina, Other than getting to know her 1-year old granddaughter better, one of the benefits of her staying with us was learning to perfect a few of these "New Orleans" dishes. The first time I visited New Orleans, she made me beans and rice. I must admit, this dish was much different than I was used to and it took some time to acquire a taste for it. Now I absolutely love it. Each time we made the beans and rice or jambalaya while she was at my house, we changed the recipe up a bit. It was hard to actually document this recipe because it's one of those a little bit of this and a little bit of that. Also, most people from New Orleans will tell you that red beans should be eaten with andouille sausage but given that I'm not a big sausage fan, I prefer to use turkey sausage, which is also very tasty.
