Flank Steak with Roasted Potatoes and Green Beans

This dinner is a staple in our house. We love our flank steak. I use a simple marinade recipe that my dad gave me (thanks dad!). My dad is a wonderful cook. I might have to share some of his recipes one day. Anyway, I think this marinade is delicious. Combine the following:

1/4 red cooking wine
1/2 cup dark brown sugar
1 cup oil
1 tbsp garlic
1/2 cup soy sauce
1 tbsp ginger

Place flank steak in a plastic ziploc and pour in the marinade. You can marinade for as long as you like, I usually do at least 8 hours because I think it absorbs more with time (Who really knows though).

For the onion roasted potatoes, I simply use the recipe on the back of the Lipton onion soup mix. Chop up a couple potatoes (I leave the skin on), place in a 13x9 glass baking dish, add 1 packet of Lipton onion soup mix, 1/3 cup olive oil and stir. Cook on 425 degrees for about 40-45 minutes. Be sure to stir often towards the end because the potatoes tend to stick to the pan.

I used frozen green beans but you can easily steam up some fresh ones if you have them on hand.
