Jeff and I love flank steak but usually I just marinade it and grill it. I recently found an interesting flank steak recipe in one of my cooking magazines and decided to try it. We had our friends Bryan and Kim over for dinner yesterday and they were kind enough to be guniea pigs for the new recipe. I wasn't sure how tasty it was going to be but we were amazed at how good it tasted. The recipe bascially constists of flank steak, roasted bell peppers, mozarella and basil. All four of us agreed that it was delicious! It was quite simple to make but the grilling was a little bit tricky because you don't want the cheese to melt all over the grill. The picture above was taken before we cooked the pinwheels. I only soaked the skewers for about 15 min but apprently they needed to be soaked longer becuase they were cooked to the point of falling apart before the meat was done. Also, I was able to find the roasted bell peppers at a local market, but I suppose you could roast your own peppers too. Anyway, if you like flank steak you will certainly enjoy this!
