Baking is NOT My Specialty

Sometimes, it's easier to just do things the simple way. Yesterday was my brother-in-law's (Uncle Brad) birthday. Allison told him over the phone that she would make him a cake (even though he lives like 700 miles away and won't be able to eat any of it). They agreed on a chocolate cake. Today, Allison and I attempted to make a chocolate fudge cake with chocolate butterscotch icing from scratch. Actually, I attempted to make it, Allison just hung around so she could lick the bowl. Have you ever tried baking a cake from scratch? It's not all that easy, especially when you want to put icing on it. The difficult part is getting the cake out of the pan without destroying it. I didn't have too much luck with that part (and yes, I did grease the pan). Hence, the cake looks a little disheveled. Here's what I managed to put together. Everything was made from scratch except the pink icing. That was leftover from some cupcakes we made last week. Anyway, happy birthday Uncle Brad, next time I'm baking you a cake from the box. Baking is not my specialty (just ask my sister).

Special note to my friend Mary - I have a new found respect for your husband!!! (he makes all of their kids birthday cakes!).

What a lucky ducky uncle I am! It was quite a treat to answer my phone yesterday and hear "HAPPYBIRTHDAYUNCLEBRAD!" (as one word) repeated over and over and over again by my favourite niece. And I dare say that's the best b-day cake I've ever gotten, even if I didn't get a piece of it.

Okay, so I admit I laughed hard when I saw that pitiful excuse for a decorated cake. Sorry...no offense. I just figure I can safely say that b/c it's SOOO resembles something that YOURS TRULY would make. hee hee

My husband would be the "martha stewart" of the family. Minus felony charges, of course.
