I had Jeff go through one of my cookbooks and pick out a recipe to make. He picked out a few and I narrowed it down to this recipe. It's from the "Cuisine at Home Perfect Pasta" cookbook. It has many of our favorite things in it - pasta, chicken, pine nuts and spinach. You can't go wrong with that combination. Neither Jeff nor I are huge tomato fans but I've been eating more of the grape sized tomatoes recently. They are very sweet and delicious. If you really don't like tomatoes, you can make this recipe without them and it will still be good. This is also the first time I had ever made a dish with goat cheese. I couldn't find any crumbled goat cheese in the store so I crumbed it at home using my cheese shredder. Goat cheese is similar in consistancy to cream cheese. I also decided to add up what it cost me to make this meal. I didn't include the staple items that I already had such as salt, oil, sugar and garlic. All of the other ingredients cost about $18. So it's a little cheaper than eating in a restaurant, especially when you add in drinks, tax and tip. It turned out pretty good, I forgot to season the chicken with salt and pepper so it was a little bland, but other than that it was a nice combination of ingredients. For the recipe, click here.
