Lasagna Roll Ups

I recently joined Pinterest. If you're not familiar with it, I'm not quite sure how to explain it. It's basically a way to try organize all sorts of information one might be interested in. It's a bit overwhelming because it puts so many great ideas in your head and I'm still figuring it out but it's been a great resource for discovering new recipes. One that I stumbled across the other day was for "Lasagna Roll Ups". The picture looked yummy so I figured I'd give it a try. The end result was not only pretty but quite delicious. The best part is the kids really liked it and got them to eat spinach! They kept asking what the green stuff was but I didn't tell them until after they ate. Hopefully now they realize they do actually like spinach. Here they are right out of the oven:
